The Chef

Julien Marchand

Julien trained in Lyon and spent a decade in the kitchens of Paris before moving to Singapore in 2019. He founded Aurelia on a simple belief, that the finest ingredient deserves the least interference.

His menus are built around memory rather than novelty, drawing on classical French technique and the produce of the region. Nothing arrives at the table that he would not serve in his own home.

The Room

Considered, from every seat.

Forty covers, low light, and enough distance between tables that a conversation stays yours. We built the room the way we build a plate, with restraint.
